The Only Banana Bread Muffin Recipe You’ll Ever Need
This banana bread muffin recipe has been my go to recipe for years! It’s hands down the easiest and quickest way to whip up something delicious and wholesome!
One of my favorite things about this recipe is how easily you can just add in something special at the end and make a different muffin each time. I almost always throw in a dash of cinnamon and vanilla when I make these, that’s my favorite and it’s simple so the kids don’t complain. I really don’t think walnuts would be a big hit with my 4 year old. So as far as ingredients go the list can be quite simple or a bit longer depending on how creative you’re feeling.
The basics:
• 2/3 ripe bananas
• 1/3 cup butter (melted)
• 1 egg
• 1 cup granulated sugar
• 1 tsp baking soda
• 1 1/2 cups flour
Optional Ingredients:
• vanilla
• cinnamon
• walnuts
• chocolate chips
• or anything that sounds yummy
The directions are super easy, you don’t need a mixer and best part, the clean up is minimal!
All you need is a medium sized bowl, a spoon, a fork, your measuring utensils, cup cake liners and tray and a coffee cup. Follow the steps below and you’ll see what I mean, this recipe is the best!
• Pre heat oven to 350 degrees.
• Mash the bananas in the bowl with the fork.
• Melt the butter in the coffee cup for about a minute in the microwave. Be careful not to over heat and boil the butter, each microwave is different. And remember it’s very hot.
• Pour into and mix with the mashed bananas.
• Rinse the coffee cup out and crack the egg into it. Beat the egg with the fork.
• Add beaten egg to the mashed banana and melted butter mixture.
• Add the sugar
• Add the baking soda
• Add the flour
If you want to you can stop here.
Place cup cake liners in cup cake baking tray and fill each cup cake liner 2/3 the way full and bake for 20-25 minutes or until tops are golden brown.
If you think your muffins need just a bit more you can add just about anything at this point. Like i mentioned in the beginning I like to add a dash of vanilla and cinnamon. Or maybe chocolate chips.
***** Chocolate chip hack! To stop all the chocolate chips from falling to the bottom of the batter place them in a colander and rise very lightly with water, then add to your batter. It will stop them from falling and settling at the bottom and keep them spread out in the muffins!******
Once you’ve added all your favorites just fill each cup cake liner 2/3 the way full in a cup cake tray and bake for 20-25 minutes or until the tops are golden brown.
That’s it! So simple and so versatile!
I’d love to hear all about your muffins and what your favorite go to ingredients are that everyone loves! Leave a comment below and share!
